Paleo Zucchini Bread

Ingredients: 1 cup (approx 1 small or 3/4 medium) shredded zucchini 4 Eggs 3 T honey or pure maple syrup 1 mashed banana 1 T (melted) coconut oil 1/2 cup Coconut Flour 3/4 t Baking Soda 1/2 t Salt 1 T Cinnamon 1/2 t All Spice 1 t Apple Cider Vinegar 1/2 cup Walnuts (optional) Directions: 1) Preheat oven to 350 degrees and grease a loaf pan with coconut oil (I like Trader's Joe's Coconut Oil Spray ) 2) Shred zucchini. Wrap in a towel or several paper towels and squeeze out excess water. Set aside. 3) In a large bowl, mix together the eggs, banana, coconut oil and honey or syrup (I used both because I did not have enough honey). 4) Add coconut flour (I like Coconut Secret brand), baking soda, salt, cinnamon, all spice and zucchini. Mix well. 5) Add Apple Cider Vinegar and Walnuts. Mix until smooth. 6) Pour into loaf pan and bake at 350 for 40-50 minutes (until a toothpick inserted into the center comes out clean) 7) Enjoy! Why MamaKenBFit?!?!

I am sure many of you have wondered this...Why MamaKenBFit? What's the point? The plan? The purpose? Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced. Paleo Pancakes TWO Ways!

I have always been a breakfast eater but never really a pancake eater. I LOVE eggs, potatoes and french toast. Mmm Mmm. :) However, when I was pregnant with my son I craved pancakes like it was my job. Luckily for me, my husband is a fantastic pancake maker. I mean, seriously, he does not cook, like evverrr. But that man, boy he can make amazing pancakes and omelets....breakfast is definitely his forte...at least in the kitchen. But, sadly once lil man was born, the pancake-making stopped but my craving and love for pancakes did not. So, here we are over two years later, still loving pancakes. So Fresh! So Clean!

Who hates squishy berries? Me! Who hates how fast berries grow mold? Me! Who hates grimy, dirty berries? Me! And who hates chemicals? Me! (and probably  hopefully you too) Well, What if I told you that I have a solution to all of your problems? Okay, well not all of your problems but I do have a solution for your berry problems. First and foremost, BUY ORGANIC! Let me repeat it again, buy ORGANIC! Listen, an extra dollar is not going to break the bank and IF it is, good thing step two is to CLEAN your berries. Why clean them? Well, even if you buy organic, you have no idea what those berries have come in contact with on their way to the store or Farmer's Market. Whole30 Results!

Okay guys, the results are in! Well, technically they have been in, I just have not taken the time to post them. I must say that I am pretty pleased with the outcome and I am kind of ready to do another Whole30 ( key words: kind of) . But I think I will hold off another week or two because I am heading to Arizona next week for a wedding and then we are heading to the in-laws' (North Carolina!) over the 4th of July. So, for now I am going to try my best to continue eating Whole30-ish but won't officially start another Whole30 until maybe mid-July. I must say that the past week has not been the best. I did not stick to my plan of continuing the Whole30/Paleo lifestyle like I had hoped. I have had some pizza, sweets, and BBQ chicken but I am still trying my best to stay on the healthy track because it simply feels better. Whole30 Days 29-30

YAAAAAAAAAAAAY!!! I did it! You guys have NO idea how exciting this is! I am one of those awful people that tends to start things without finishing them. I am seriously so proud of myself and feel SO empowered and confident right now! Yay Yay Yay! Okay, here we go... Day 29 BREAKFAST: Sauteed Zucchini and Sweet Potato topped with two Over Easy Eggs I got this idea from an episode of Pioneer Woman in which Ree was home alone so she was making lighter dishes. She made this breakfast that she called " Carb Buster Breakfast " in which she sauteed zucchini and yellow squash with onions, topped it with grilled tomatoes and two poached eggs. I did not have yellow squash and since I am not watching carbs (as she was when she prepared her dish), I decided to use a sweet potato since those Zucchini & Sweet Potato Latkes I made a week or so were SO yummy. Whole30 Days 24-28

This week was VBS so it was completely CRAZY! I literally pulled into my garage each night, grabbed my kiddo out of his carseat and ran across the parking lot to the church. So, meals weren't overly glamorous (but lets be honest, when are they?) but they did the job! Day 24 BREAKFAST: Zucchini & Sweet Potato Latkes topped with an over easy egg This latkes were DELICIOUS and so easy to throw together. They just take some patience while they cook. I loved them! SNACK: Blueberries LUNCH: Aidell's Chicken & Apple Sausage with Sauteed Zucchini and Potatoes My husband begged me to make more potatoes and since they were going bad anyway, I obliged and they were yummy. BONUS: I even talked him into eating some sauteed zucchini! Whole30 Days 14-23

When I started Whole30, it was my intent to write posts every day. Well, as you can tell, that just did not happen. I apologize. Life is just crazy and I simply have not had the time. So here is an update from the past week. Day 14 BREAKFAST: Sliced Banana with a scoop of Barney's Almond Butter Sunday mornings are super duper busy so quick breakfasts are all I have time for as I am usually running out the door at the last possible minute. My husband is a pastor so he heads to the church early so I have to get myself and our son ready. I should probably just wake up earlier so I can have a better breakfast on Sundays, but I prefer the sleep. Whole30 Days 7-13

Sorry for the lack of posting this week. Sunday morning around 3:30 AM, I ended up in the ER ( totally, 100% NOT related to Whole30 ). I was not released from the hospital until 1:30 PM. And I was felt pretty darn crummy the rest of the week so, posting about my Whole30 really was not high on my list of priorities. However, I am feeling way better and am excited to share with you about how I perservered during a very  difficult week. Day 7  Day 7 I spent ten hours in the ER (again, I reiterate, NOT related to the Whole30). While I was there I was not permitted to eat or drink (nor did I want to). Upon my release I literally just wanted to go home and sleep; which is what I did. But eventually I had to take my pain medicine and of course it says "Take with Food" so, I rummaged through my kitchen looking for anything quick that I did not think would cause me to throw up (for like 4th or 5th time that day). Whole30 Days 5 & 6

Day 5 BREAKFAST: Two hard boiled eggs, blueberries, and sliced yellow bell pepper with spicy mayo (home made Whole30 mayo mixed with Franks Hot Sauce) Soooo good and kept me full through a VERY busy morning at work. In fact I did not even want/get lunch until after 1:30. LUNCH: Applegate Farms Organic Smoked Turkey Slices with Steamed Broccoli and Cauliflower Honestly, I have had this turkey before and it was really good but yesterday I could not eat it. It was slimey and it completely grossed me out so I only took a couple bites and then just chowed down on my veggies. SNACKS: Fruit Kabobs and a Banana We had two birthdays in the office yesterday and a co-worker make this cute little grill out of a watermelon and topped it with fruit kabobs. Whole30 Day 4

Day 4 BREAKFAST: 3 Hard Boiled Eggs (Cage Free, Organic) with a Banana and a tablespoon of Barney Bare Almond Butter I love hard boiled eggs and for some reason I just don't take the time to "make" them but I am so glad I did last night. I just sliced them and sprinkled on salt and pepper...so yummy! The banana was a little too ripe for my liking (I like them still slightly green but I decided to suck it up today and eat the spotted one because that's what I had) so I ate it with some almond butter. This was a very fulfilling breakfast and kept me full till lunch. LUNCH: Taco salad with the leftover turkey I had last night, romaine and a scoop of guacamole.  I forgot to take a pic till I was half way through so most of my lettuce is gone. Whole30 Day 3

Guys. Today I passed up on Spaghetti and Meatballs at Youth Group without a second thought. THIS. IS. A. BIG. DEAL. If you know me, you know that I love love LOVE Italian food. I mean seriously, the first two years my husband and I were married, he was convinced all I knew how to cook was pasta or tacos (I also LOVE Mexican food). I can cook but those are my favs and they're so easy peasy. He is used to Southern Cookin (he's a NC boy) and I don't know how to do that (although I have picked up a few recipes from my awesome mother-in-law). So, anyway I was pretty darn proud of myself. I did have the urge to take a big ole bite outta little man's garlic bread but I resisted. Anyhoo, here is how Day 3 went...
