Whole30 Days 29-30

YAAAAAAAAAAAAY!!! I did it! You guys have NO idea how exciting this is! I am one of those awful people that tends to start things without finishing them. I am seriously so proud of myself and feel SO empowered and confident right now! Yay Yay Yay! Okay, here we go...

Day 29


BREAKFAST:

Sauteed Zucchini and Sweet Potato topped with two Over Easy Eggs

I got this idea from an episode of Pioneer Woman in which Ree was home alone so she was making lighter dishes. She made this breakfast that she called "Carb Buster Breakfast" in which she sauteed zucchini and yellow squash with onions, topped it with grilled tomatoes and two poached eggs. I did not have yellow squash and since I am not watching carbs (as she was when she prepared her dish), I decided to use a sweet potato since those Zucchini & Sweet Potato Latkes I made a week or so were SO yummy. I decided to use similar seasonings that I used in the Latkes. I diced the zucchini and potatoes in bit size pieces, cooked them on medium-high heat in ghee with cumin, garlic powder, onion powder, salt, and pepper. I was going to try to make poached eggs for the first time because they looked delicious and so easy but I did not have any white vinegar so, I just went my go-to eggs, over-easy....man, do I love runny, ooey, gooey yolky eggs. This meal was yummy, easy, and filling! In fact, I had leftover veggies.

LUNCH:

Chicken Fried Cauli-Rice

I have been wanting to try Cauli-Rice for over a month but a couple weeks before I started my whole thirty, I dumped a bunch of cauliflower florets in my food processor, press the button, and the motor started...but the blade didn't. I tried and tried and tried again. Finally my husband came in to try it and proceeded to take it apart. He then had our first elder (remember, my hubs is a pastor and we live on the church property) come look at it because he can fix ANYTHING. He immediately recognized that the capacitor needs replaced. I have searched and searched and cannot find the right one. The wattage or something is always off. Super disappointing. All that to say, I haven't made Cauli-Rice because my food processor is in like five different pieces right now.

So, I finally just decided to do it by hand....and it took much longer than expected but was very good. First I cooked some chicken in coconut oil and when it was done I added some Coconut Aminos and let it simmer. I added coconut oil to a large skillet over medium-high heat and added a diced onion, zucchini, broccoli, carrot and cooked it until the veggies were tender. Then I added the cauli-rice, chicken, a scrambled egg and some ghee. At the end I added Coconut Aminos and a splash of Fish Sauce. I don't know if I will use the Fish Sauce again because it smelled like raw fish and grossed me out. BUT the stir fry was delicious so it was okay and worth it. Once I put my stir fry in a serving bowl, I added a sprinkle of crushed red pepper. Normally I would dump on Yum-Yum sauce (which I did miss, I am not going to lie) but it was delicious without it.

DINNER:


This chili is so good. We usually always have my Husband's Mom's Chili because it is delicious and it is the only chili my husband claims he will eat. But her chili has added sugar, canned Hunt's sauce, kidney beans and corn (not in her original recipe but requested by my hubster). Now, don't get me wrong it is out of this world BUT it is definitely not Whole30 compliant. Anyhoo, this Paleo Chili is spicy and hearty and I love it! I seriously did not even miss the beans. Definitely a good chili recipe to try. If you don't like spice, then make adjustments such as not adding the cayenne.

Apparently I was REALLY busy this day because I only took two picture. Oops! Oh well, it's Day 30 and that is SO exciting!

I actually like the (un)oatmeal better leftover than when I originally made it. And veggies were awesome!

The Ladies' Group at Church had their monthly meeting this night so I had about twenty minutes to feed my son and eat so I just went straight for the leftovers because they were easy. And I am so glad I did because at the meeting they had cheesy beef nachos and tacos with cupcakes and strawberry shortcake (translation: nothing Whole30 compliant). It was a little awkward not eating when every one else was, but I honestly did not care because I was full and satisfied and the tacos/nachos (which I usually LOVE) weren't even appealing (even though they looked yummy). I love this new mindset!

Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced. Paleo Pancakes TWO Ways!

I have always been a breakfast eater but never really a pancake eater. I LOVE eggs, potatoes and french toast. Mmm Mmm. :) However, when I was pregnant with my son I craved pancakes like it was my job. Luckily for me, my husband is a fantastic pancake maker. I mean, seriously, he does not cook, like evverrr. But that man, boy he can make amazing pancakes and omelets....breakfast is definitely his forte...at least in the kitchen. But, sadly once lil man was born, the pancake-making stopped but my craving and love for pancakes did not. So, here we are over two years later, still loving pancakes. And believe it not, lil man loooooooves breakfast. It's the one meal I can count on him eating and loving 100%  of the time. We usually have pancakes at least once a week. Whole30 Day 2

Disclaimer: Due to our broken AC, the little man and I stayed with my Momma last night so my meals were semi impromptu and ended up lacking in veggies (but not in deliciousness!). Also, my meals will be a little more appealing once I have the opportunity to go to the store so don't give up on me if you're looking at these posts and thinking "Blah. Those meals are boring." 1) They're so yummy 2) They'll get better...I just need to make a trip to the grocery. Mmkay...onto the important stuff. Day 2 Breakfast: Two organic, cage free eggs over-easy with strawberries, blackberries, and blueberries. I mean, this is pretty straight forward and who wouldn't love it? I am a sucker for eggs over-easy. Lunch: Leftover taco meat topped with Muir Glen Organics Mild Salsa and guacamole. And more berries. Seriously.
