Whole30 Days 14-23

When I started Whole30, it was my intent to write posts every day. Well, as you can tell, that just did not happen. I apologize. Life is just crazy and I simply have not had the time. So here is an update from the past week.

Day 14


BREAKFAST:

Sliced Banana with a scoop of Barney's Almond Butter

Sunday mornings are super duper busy so quick breakfasts are all I have time for as I am usually running out the door at the last possible minute. My husband is a pastor so he heads to the church early so I have to get myself and our son ready. I should probably just wake up earlier so I can have a better breakfast on Sundays, but I prefer the sleep.

LUNCH:

Paleo Buffalo Chicken Wings with Roasted Broccoli and Whole30 Ranch

Oh muh gooooosh guys. These wings were SO good. I totally ate like 6 of them. Seriously, click the link and make them like, right now. SO GOOD!

DINNER:

Aidell's Chicken & Apple Sausage with leftover Roasted Broccoli

We also have evening church services so this was another quick meal so I could rush out the door and beat the church bell. I love that even though it was a quick meal, it was a delicious and filling meal.

Day 15


BREAKFAST:

Scrambled Eggs with Yellow Bell Pepper

SNACKS:

Whole Food Unsalted Pistachios, a Banana, a few Freeze Dried Tropical Fruits

These snacks were throughout the day. I did not really eat the Freeze Dried Fruit because I did not like them that much so I felt like it just was not worth it. I think I tried one of each fruit and them handed them over to the hubs who ate the whole bag.

LUNCH:

Two grilled Beef Hot Dogs with a Baked Sweet Potato, Steamed Broccoli, Grilled Green Bell Peppers, Raw Yellow Bell Peppers, Cucumbers with Whole30 Ranch.

This was at a Memorial Day cook out at my dad's house. He also made grilled chicken but it was marinated in BBQ sauce because he forgot I could not eat BBQ so I ate Beef Hot Dogs with the kiddos. But that's okay, they were so yum! And I was so proud of myself for all the veggies I ate! Annnnd I skipped out on the best looking carrot cake....Mmm icing...but I was totally okay with it because I was so full.

DINNER:

Aidell's Chicken & Apple Sausage with Steamed Asaragus

Day 16

BREAKFAST:

{An overcooked} Baked Sweet Potato

Microwaved it too long. Whoops. And I was at work so I ate it anyway because I had nothing else to eat.

SNACKS:

Coffee with Coconut Cream and Cinnamon, a Clementine, and a Pear

I had seen a lot of Whole30ers posting about putting coconut cream and cinnamon in their coffee and so even though I am okay with black coffee, I decided to try something new and...blah. It was not good. So, I will stick with black coffee. I also only ate like 3 bites of the pear because it was not good. It had a weird bitter taste...maybe it was not ripe enough yet? Who knows.

LUNCH:

Leftover Pulled Pork with Whole30 BBQ Sauce

Like I mentioned earlier, the Tangy BBQ Sauce from the new Whole30 book is so good I could it with a spoon! Seriously, try it.

DINNER:


I am seriously IN LOVE with this recipe! It was sooooo good! It is made with Butternut Squash and even though I did not cook mine enough to mash it completely, it was delicious! I think I actually enjoyed the chunky-ness of the squash. Make this tonight and thank me later. ;)

Day 17


I LOVED my meals this day! They were the BOMB!

BREAKFAST:

Paleo "Oatmeal" topped with Pecans and Blueberries

Some may argue this is SWYPO but, for me, I disagree. Oatmeal is not something I crave or eat a lot. It is not even a go-to breakfast for me. But if oatmeal is something you love, crave, go-to for breakfast, then this may be SWYPO for you and you should not try something like this on your Whole30. But if not, try it because it is so good. It is pretty much eggs scrambled with a mashed banana and nuts. DELISH! (but weird sounding. I know. Don't knock it till you try it.)

LUNCH:

Shredded Buffalo Chicken in Romaine Lettuce Boats drizzled with Whole30 Ranch and a Carrot sticks on the side.

I just used the buffalo sauce recipe from Day 14 and added shredded chicken. These boats/tacos/wraps (whatever you wanna call them) were pretty messy but oh so good!

DINNER:

Leftovers from Lunch

I told you they were good. (No ranch this time because I was out and they weren't spicy enough to warrant it)

Day 18

BREAKFAST:

Omelet in a mug with a banana

I ate this on my way to work. All I did was spray a mug with olive oil, scramble two eggs with salt, pepper, garlic powder and cayenne pepper. Then I microwaved it for a minute. Stirred. Microwaved for another 30-60 seconds until it was not runny anymore.

SNACK:

Black Coffee with an Apple Pie Lara Bar

LUNCH:

Leftover "Cheesy" Chicken Casserole from Day 16.

DINNER:

Easy Paleo Homestyle Meatloaf with a baked Sweet Potato

This meatloaf tasted like a giant meatball and it was SO good! Even my husband liked it...Score! 

Day 19



BREAKFAST:

Omelet in a mug with a small Black Coffee from Tim Hortons

SNACK:

Frozen Mango Chunks

LUNCH:

Two slices leftover Meatloaf from last night

DINNER:

Stir fry from BD's Mongolian BBQ (Chicken, Crab, Shrimp, Scallops with Broccoli, Sugar Snap Peas, Cauliflower, Green Peppers, Carrots, Mushrooms, an Egg, and spices {Garlic Powder, Cayenne, Crushed Red Pepper, Salt...I think that's it but I can't remember} cooked in Olive Oil)

We went to BD's for my sister's birthday and I did a lot of research before I went; checked sauce ingredients, etc. I was pretty bummed when I got there because I LOVE BD's and every single sauce either had soy or sugar or both which meant no sauce and sauce is my favorite part...I usually use all the spicy sauces. But I must say that I was pleasantly surprised by how delicious my meal was with just meat, veggies, and spices. I was so proud of myself for not caving even though I was tempted to...I contemplated it literally all week. {{Round of applause please}}

Day 20


BREAKFAST:

Paleo "Oatmeal" 

I had a banana that needed eaten ASAP and I cannot eat banana when they're soft...they make me gag so I decided to the make the "oatmeal" again because it was so yummy and I was not in the mood for eggs.

LUNCH:

Hamburger (no bun or condiments) with grapes, strawberries, blueberries

We went to a friend's cookout to celebrate her birthday so I did not think about snapping a picture. But I did successfully avoid eating this deliciously beautiful cake...


Believe me, I had to walk away because I really wanted one of those strawberries. But the more I avoid those cravings, the more I realize that's all they are, cravings. I don't REALLY want or need those things and I am perfectly content not having them. I love the transformation of mind that comes with the Whole30 program.

SNACK:

Grapes

DINNER:

Steak with a Sweet Potato, Steamed Asparagus, and a handful of Cherries

My dad had a cookout for my sister's birthday and he made the BIGGEST steaks I have ever attempted to eat (key word: attempted). I tried but could not finish it. That steak was massive! But it was also delicious. I did however eat all of my sides and skipped out on cheesecake.

Day 21


BREAKFAST:

Egg in a Mug

I literally scarfed this down in like 2 minutes and then ran across the parking lot to church while they were ringing the bell (we live on the church property so I really have no excuse for being late yet I always am for some reason...ugh)

SNACK:

Fresh Apple Juice

I don't know if this is considered a snack or not but I need Apple Cider for our lunch recipe and I did not have any. We live 20 minutes from town so running to the store was not an option. So, I busted out my juicer and juiced a couple apples. Then proceeded to drink the leftover juice because it's fresh juice so why not? Yummo!

LUNCH:

"Best Sloppy Joes. Ever." with Sweet Potato Fries

I am sorry but these were not the best sloppy joes ever. In fact, I only at them because I was starving and just spent the last hour (or however long) making them. Plus, I hate the thought of wasting money by tossing them. But my husband took one bite and went to the fridge for leftovers from my dad's last night. Maybe it's just because the last sloppy joes we had were by Pioneer Woman (recipe here) and they were UH-MAZING! I don't know. I guess were just preferred a different style of sloppy joe...sweet (which isn't really an option on Whole30) and zesty is what I look for...with a little kick. I don't know. It's all about personal preference I guess. My sweet potato fries were good though.

DINNER:

The last of the Meatloaf and "Cheesy" Chicken Casserole before church

Again, Sundays are busy for us so quick and easy are a must. Plus, I hate letting leftovers go to waste.

Day 22

BREAKFAST:

Scrambled eggs with Potato Hash (Golden Potatoes with Yellow and Orange Bell Peppers, Garlic Powder, Onion Powder, Salt, Pepper cooked in Ghee) and a side of Whole30 Ketchup (in the new Whole30 Book) that I made for the sloppy joes the day before. Oh, and a few cherries. (There was a strawberry but my son ate it)

This was seriously one of my favorite breakfasts. So good, easy, and filling.

LUNCH:

Chipotle Salad with Chicken, Hot Salsa, and Guacamole

We went to the grocery and my husband was "starving" so he decided to go to Chipotle since he knows I can eat there. Again, I didn't have the heart to tell him I can really only have the Carnitas which they are out of. Oh well, still so yummy and I did not even miss the rice, beans, and corn.

SNACK:

Apple Pie Lara Bar

We had a late lunch but VBS started this night and runs 6-8:30 so I knew I needed to eat something to hold me over so I wasn't starving by snack time because I would be pretty frustrated if I gave in and ate strawberry shortcake with only a week of Whole30 left.

DINNER:

Two Applegate Farms Uncured Beef Hotdogs with Sauteed Bell Peppers and Grapes

So simple and so good. If you haven't tried beef hot dog, you are missing out! I have a strong dislike for hot dogs but love these.

Day 23

BREAKFAST:

Sliced Banana with Barney's Almond Butter and 7 Cherries

LUNCH:

{NOT PICTURED} Pulled Pork from 7 Miles Smokehouse

We went to lunch to celebrate my boss's birthday. This Smokehouse is my favorite but the side dishes are not Whole30 friendly so I just had some pulled pork (first time I've had it without their BBQ Sauce...still super delicious).

DINNER:

Applegate Farms Beef Hot Dog with Diced Golden Potatoes cooked in Ghee and a side of Whole30 Ketchup

I have potatoes that need used ASAP and lots of ketchup that needs used so this seems like an appropriate use. My son ate some of the hot dog and my husband kept picking at the potatoes says "these are so good" 

How I Feel...

Really good but tired. Not sure if I am tired just because I am busy or what's going on but I felt so sleepy this past week. But I feel like I do have more energy to play around with my son. Like I feel tired but I don't feel lazy...I don't feel like I need to lounge around on the couch. I find myself cleaning up and chasing little man around. I also feel really good mentally. I feel like I have good control over my cravings and temptations and can rationally think about whether I really truly want something or if it just sounds good but will make me feel crummy afterward. I love that! Also, I can feel my clothes getting looser and I "feel" lighter...I don't know if you've ever experienced that heavy feeling but I don't feel that any more, so even if I haven't lost a lot of weight, I feel so much better and lighter and that is 100% worth it. Plus, my husband told me the other day that my face looked thinner...WIN!

Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced. Sprinkle with salt and pepper.  -Bake face down on a baking sheet for 40 minutes -Once spaghetti squash is done cooking, let cool for a few minutes then shred the insides with a fork (it will easily peel away...

Paleo Pancakes TWO Ways!

I have always been a breakfast eater but never really a pancake eater. I LOVE eggs, potatoes and french toast. Mmm Mmm. :) However, when I was pregnant with my son I craved pancakes like it was my job. Luckily for me, my husband is a fantastic pancake maker. I mean, seriously, he does not cook, like evverrr. But that man, boy he can make amazing pancakes and omelets....breakfast is definitely his forte...at least in the kitchen. But, sadly once lil man was born, the pancake-making stopped but my craving and love for pancakes did not. So, here we are over two years later, still loving pancakes. And believe it not, lil man loooooooves breakfast. It's the one meal I can count on him eating and loving 100%  of the time. We usually have pancakes at least once a week. So, naturally, I had to move on from Aunt Jemima and Hungry Jack to something a little yummier and a lot healthier. Whole30 Day 2

Disclaimer: Due to our broken AC, the little man and I stayed with my Momma last night so my meals were semi impromptu and ended up lacking in veggies (but not in deliciousness!). Also, my meals will be a little more appealing once I have the opportunity to go to the store so don't give up on me if you're looking at these posts and thinking "Blah. Those meals are boring." 1) They're so yummy 2) They'll get better...I just need to make a trip to the grocery. Mmkay...onto the important stuff. Day 2 Breakfast: Two organic, cage free eggs over-easy with strawberries, blackberries, and blueberries. I mean, this is pretty straight forward and who wouldn't love it? I am a sucker for eggs over-easy. Lunch: Leftover taco meat topped with Muir Glen Organics Mild Salsa and guacamole. And more berries. Seriously.
