Whole30 Days 24-28

This week was VBS so it was completely CRAZY! I literally pulled into my garage each night, grabbed my kiddo out of his carseat and ran across the parking lot to the church. So, meals weren't overly glamorous (but lets be honest, when are they?) but they did the job!

Day 24


BREAKFAST:

Zucchini & Sweet Potato Latkes topped with an over easy egg

This latkes were DELICIOUS and so easy to throw together. They just take some patience while they cook. I loved them!

SNACK:

Blueberries

LUNCH:

Aidell's Chicken & Apple Sausage with Sauteed Zucchini and Potatoes

My husband begged me to make more potatoes and since they were going bad anyway, I obliged and they were yummy. BONUS: I even talked him into eating some sauteed zucchini!

DINNER:

Leftover Sloppy Joes and Sauteed Zucchini

Yes, the sloppy joes were not good but I hate wasting food plus by the time I got home after VBS I was starving and did not care what I was eating. I added some Franks Hot Sauce which helped the joes taste a little better.

Day 25


BREAKFAST:

Strawberries, Blueberries, Blackberries, Slivered Almonds with Coconut Milk

LUNCH:

Applegate Organics Fire Roasted Red Pepper Chicken & Turkey Sausage with leftover Zucchini & Sweet Potato Latkes drizzled with Franks Hot Sauce

SNACK:

Cherry Pie Larabar

I was starving and stayed at work later than planned so I wasn't going to have time to go into my house for food before VBS. I found this larabar in the bottom of my purse and ate it. But I did only eat half because I just wasn't feelin it. Plus Whole30 had just announced they were no longer approving fruit and nut bars (except in emergency situations...which this was. I haven't been having sugar or dessert cravings so this was definitely not to satisfy those) so I think that was also in the back of my mind. 

DINNER:

Applegate Organics All Beef Hot Dog

This particular evening was a bad evening in the food world apparently. Clearly, I did not have a good dinner but it worked in the midst of my CRAZY night (VBS ran late, Little Man wouldn't go to sleep...). This is a prime example of why prepping/planning is WAY important.

Day 26


BREAKFAST:

Two Hard Boiled Eggs, a Banana and a scoop of Barney's Almond Butter

LUNCH:

Buffalo Chicken Salad-- Romaine, Cucumbers, Carrots, Cherry Tomatoes, Shredded Chicken w/Franks and Whole Sister's Dump Ranch 

So, I made this Ranch at 11 PM and I cannot explain how upset I was that it was bedtime because this ranch is SO stinking good that I wanted to eat it RIGHT then! Seriously. SO SOOO Good! And ridiculously easy to make. I was SO excited for lunch this day. It was so yummy.

DINNER:


I know, I know. This is not a full meal....where are the veggies?! But again, crazy busy week and I was trying to eat super fast so I could put the little guy to bed after another late night at VBS (I know, I should have prepped and planned better, but at least I made a roast, right?) And OH. MY. GOSH. was this roast good!! Seriously, probably the best roast I have ever had. I could have just drank the broth...it was THAT good! For real. Go make it NOW!

Day 27


BREAKFAST:


I did not make this because I was wanting oatmeal. I made this because I wanted to try something I normally wouldn't and I thought my son might eat it and then I wouldn't have to make two breakfasts. And I was right. He ate almost half of it! And I only ate about a fourth. It wasn't that great. It was good but I probably won't make it for my self again.

LUNCH:

Leftover Roast with Roasted Asparagus

I am actually so sad this roast is gone because it was THAT good. In fact, the hubs and I were "fighting" over leftovers.

SNACK:

Cherry Lime La Croix

I put this in the freezer because it was on my counter and I wanted it cold. I left in there too long and when I opened it, it was like a slushy and it was so yummy that way! I will probably do that from now on.

DINNER:

Paleo Almond Chicken Fingers with Steamed Broccoli and a salad with Romaine, Cucumbers, Carrots, Cherry Tomatoes and Dump Ranch

I seriously wish I made a double batch of these. They were delicious! Even my tot ate one and he NEVER eats chicken...or much meat for that matter. Sadly, I was nice and let my husband eat the leftovers the next day...what was I thinking?!

Day 28


BREAKFAST:

Two Over Easy Eggs with Grapes

My fruit loving toddler ate stole most of my grapes.

LUNCH:

Buffalo Chicken Salad--Romaine, Cucumber, Carrot, Cherry Tomato, Shredded Chicken cooked in Ghee and Franks Hot Sauce with Dump Ranch.

DINNER:

Two Applegate Organics All Beef Hot dogs with Romaine topped with Dump Ranch and more grapes

Since I let my hubs have the leftover chicken tenders, I settled for hot dogs which my kiddo ate some of and half of my grapes (Trust me, I do feed this kid his own meals. He is just a bottomless pit...like his Daddy).

SNACK:

Organic Unsweetened Applesauce

I decided it was time to start working out so I started Jillian Michael's Yoga Meltdown and I felt a little lightheaded and shaky so I needed a little snack. I did not want anything too heavy since it was night time.

How I Feel...

Good. Energetic. Eager for Day 30. I am SO close and ready to start creating a new balance in my life and new normal. I plan to keep eating according the the Whole30 rules BUT if I want to go outside the "rules" occasionally then I will with my new found self control and will power. I am pretty excited about this new mindset and how I feel on a daily basis. I love the new me!

Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced. Sprinkle with salt and pepper.  -Bake face down on a baking sheet for 40 minutes -Once spaghetti squash is done cooking, let cool for a few minutes then shred the insides with a fork (it will easily peel away...

Paleo Pancakes TWO Ways!

I have always been a breakfast eater but never really a pancake eater. I LOVE eggs, potatoes and french toast. Mmm Mmm. :) However, when I was pregnant with my son I craved pancakes like it was my job. Luckily for me, my husband is a fantastic pancake maker. I mean, seriously, he does not cook, like evverrr. But that man, boy he can make amazing pancakes and omelets....breakfast is definitely his forte...at least in the kitchen. But, sadly once lil man was born, the pancake-making stopped but my craving and love for pancakes did not. So, here we are over two years later, still loving pancakes. And believe it not, lil man loooooooves breakfast. It's the one meal I can count on him eating and loving 100%  of the time. We usually have pancakes at least once a week. So, naturally, I had to move on from Aunt Jemima and Hungry Jack to something a little yummier and a lot healthier. Whole30 Day 2

Disclaimer: Due to our broken AC, the little man and I stayed with my Momma last night so my meals were semi impromptu and ended up lacking in veggies (but not in deliciousness!). Also, my meals will be a little more appealing once I have the opportunity to go to the store so don't give up on me if you're looking at these posts and thinking "Blah. Those meals are boring." 1) They're so yummy 2) They'll get better...I just need to make a trip to the grocery. Mmkay...onto the important stuff. Day 2 Breakfast: Two organic, cage free eggs over-easy with strawberries, blackberries, and blueberries. I mean, this is pretty straight forward and who wouldn't love it? I am a sucker for eggs over-easy. Lunch: Leftover taco meat topped with Muir Glen Organics Mild Salsa and guacamole. And more berries. Seriously.
