Whole30 Days 5 & 6

Day 5



BREAKFAST:

Two hard boiled eggs, blueberries, and sliced yellow bell pepper with spicy mayo (home made Whole30 mayo mixed with Franks Hot Sauce)

Soooo good and kept me full through a VERY busy morning at work. In fact I did not even want/get lunch until after 1:30.

LUNCH:

Applegate Farms Organic Smoked Turkey Slices with Steamed Broccoli and Cauliflower

Honestly, I have had this turkey before and it was really good but yesterday I could not eat it. It was slimey and it completely grossed me out so I only took a couple bites and then just chowed down on my veggies.

SNACKS:

Fruit Kabobs and a Banana

We had two birthdays in the office yesterday and a co-worker make this cute little grill out of a watermelon and topped it with fruit kabobs. The kabobs had a watermelon ball, a strawberry, a grape, and a blueberry. I ate 3 kabobs minus the watermelon because I cannot stand the texture of melon nor the taste of watermelon. When I got home from work I was pretty hungry but I was staying with my mom because I had some late night plans with my girl friends and she was keeping my kiddo so we were planning to have dinner together when she got from work. Since she was not going to be home for another hour or two, I decided to eat a banana which held me over till dinner (and of course, I shared it with the little man).

DINNER:

Salad Bowl from Chipotle

My dear sweet Mother stopped at Chipotle for us for dinner since it is one of the only places that is Paleo/Whole30 friendly. The issue is that the only meat not made with rice bran oil (grains are a Whole30 no-no) is the Carnitas. Weeellll, Mom said they had posted that there was shortage of free-range pork and rather than serving food that does not meet their standards, they would not have Carnitas until they found a new supplier. So, she ordered chicken for me. And of course, because she was sweet enough to go through the hassel of stopping for food I wasn't going to turn it down and be rude, so though it's technically not 100% compliant, it happens and ya move on. So any way, my salad was topped with Chicken (obviously), Tomatillo-Red Chile Salsa and Guacamole. MmmMmm good!

How I Felt...

I felt pretty good. I kind of feel like I hit a wall around 4 PM but that probably had a lot to do with the fact that I did not have a great lunch. After dinner I felt good and pretty energetic. I actually had a girls night with my friend and we went to a 9:20 showing of Pitch Perfect 2. I am normally winding down and preparing for bed at 9:20 but surprisingly I was awake, alert and did not doze off during the movie (which could be because it is super funny and/or because we were in the front row so seating wasn't overly comfortable since we had to slump down to watch the movie). Also, once I did finally make it home, I slept like a rock; the best I've slept all week. Uh-mazing! 


Day 6


This morning my sister, little man and I trekked to Whole Foods and Trader Joes to pick up Whole30 compliant foods that are not available at our local grocery stores. We had so much fun and spent way too much money but it was totally worth it! I then rushed to take my sister home so I could get home to attend my friend's baby shower. In the process, we missed lunch. Yikes! But I made up for it with a snack and then lots of yumminess at the shower.

BREAKFAST:

Leftover Chicken Sweet Potato Hash from Wednesday.

I think I actually liked this better leftover than I did freshly made. I also had two bites of banana because little man wanted to share his breakfast with me.

SNACK:


This may be my favorite Larabar yet. Or maybe I was just really hungry. Who knows.

"LUNCH" (not pictured):

Raw Cauliflower, Broccoli, Baby Carrots, Cucumbers, Strawberries, Grapes, Bananas

I was at a baby shower and resisted Buffalo Chicken Dip (my fav!!) and filled my plate with yummy veggies and fruits WITHOUT any dipping sauce (ie. Fruit Dip or Ranch) and I felt so good about! And it kept me full till dinner. I was pleasantly surprised to be honest.

DINNER:

Taco Salad with the left Ground Turkey from Wednesday with Romaine Lettuce, Avocado cubes, diced Cherry Tomatoes and Tessameae's Southwest Ranch.

So very yummy! I think the Tessamae's really added a little-somethin-somethin that put this over the top. If you haven't checked out their products, you should. Most are compliant, just check labels!

How I feel...

Good. I haven't noticed any changes in my appearance but I feel lighter/slimmer. I am probably not (or maybe I am) but I just feel that way and I like. I hate that heavy feeling you get after eating too much or eating a stick-to-your-bones-meal so feeling lighter is a nice contrast. Hopefully, I am getting lighter and healthier. Healthier is definitely goal #1 but finally losing the weight I gained while pregnant would definitely be a perk. Any way, I am loving the way I feel and I am telling anyone who will listen. In fact, I am sure my sister got tired of listening to me go on and on about this program and how great I feel and how I think everyone should try this but oh well, I will keep spreadin the word.

Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced. Sprinkle with salt and pepper.  -Bake face down on a baking sheet for 40 minutes -Once spaghetti squash is done cooking, let cool for a few minutes then shred the insides with a fork (it will easily peel away...

Paleo Pancakes TWO Ways!

I have always been a breakfast eater but never really a pancake eater. I LOVE eggs, potatoes and french toast. Mmm Mmm. :) However, when I was pregnant with my son I craved pancakes like it was my job. Luckily for me, my husband is a fantastic pancake maker. I mean, seriously, he does not cook, like evverrr. But that man, boy he can make amazing pancakes and omelets....breakfast is definitely his forte...at least in the kitchen. But, sadly once lil man was born, the pancake-making stopped but my craving and love for pancakes did not. So, here we are over two years later, still loving pancakes. And believe it not, lil man loooooooves breakfast. It's the one meal I can count on him eating and loving 100%  of the time. We usually have pancakes at least once a week. Whole30 Day 2

Disclaimer: Due to our broken AC, the little man and I stayed with my Momma last night so my meals were semi impromptu and ended up lacking in veggies (but not in deliciousness!). Also, my meals will be a little more appealing once I have the opportunity to go to the store so don't give up on me if you're looking at these posts and thinking "Blah. Those meals are boring." 1) They're so yummy 2) They'll get better...I just need to make a trip to the grocery. Mmkay...onto the important stuff. Day 2 Breakfast: Two organic, cage free eggs over-easy with strawberries, blackberries, and blueberries. I mean, this is pretty straight forward and who wouldn't love it? I am a sucker for eggs over-easy. Lunch: Leftover taco meat topped with Muir Glen Organics Mild Salsa and guacamole. And more berries. Seriously.
