Whole30 Day 3

Guys. Today I passed up on Spaghetti and Meatballs at Youth Group without a second thought. THIS. IS. A. BIG. DEAL. If you know me, you know that I love love LOVE Italian food. I mean seriously, the first two years my husband and I were married, he was convinced all I knew how to cook was pasta or tacos (I also LOVE Mexican food). I can cook but those are my favs and they're so easy peasy. He is used to Southern Cookin (he's a NC boy) and I don't know how to do that (although I have picked up a few recipes from my awesome mother-in-law). So, anyway I was pretty darn proud of myself. I did have the urge to take a big ole bite outta little man's garlic bread but I resisted. Anyhoo, here is how Day 3 went...

Day 3

BREAKFAST:

Melissa's Chicken Hash (from the new Whole30 book)


I did not have apple cider or walnuts so I used apple cider vinegar and sliced almonds. The recipe calls for arugula or baby spinach. I used baby spinach because that's what I had. I really enjoyed this meal and will be eating leftovers later this week. The chicken especially had a very yummy flavor and was a nice change for breakfast. ((Also, if you haven't purchased this book, stop what you're doing and click the link above and order this book. It is awesome and SO worth it! I used it twice today for recipes and will be using it much more once I go to the grocery this weekend.))

LUNCH:

Aidell's Chicken & Apple Sausage {again lol} with steamed broccoli and home made sweet potato chips (yes, those are sweet potatoes. I used a Golden Sweet Potato which is why it is not bright orange like usual but it tasted like a normal sweet potato) served with a side of home made mayo for dipping.

Sweet Potato Chips: Thinly slice 1 sweet potato and place in a bowl. Drizzle in 1 tablespoon of olive oil and toss. Line a baking sheet with parchment paper. Brush a little olive oil over the parchment paper and then arrange potato slices on baking sheet so that they are not overlapping. Sprinkle with seasonings (I used salt and pepper). Bake on 350 degrees for 20 minutes. Remove from oven, flip potatoes over, rotate pan when putting back in the oven. Bake for an additional 15-20 minutes.

Mayo: Add 1 egg, 1/4 cup LIGHTER flavor olive oil, 1 teaspoon ground mustard, 1 teaspoon salt into a food processor or blender. Blend until mixed and then SLOWLY (and I mean slowly) add in an additional 1 cup of olive oil (I you do not add the oil slowly, the mayo will not thicken and you will be left with a runny mess and a lot of disappointment....not that I know from experience or anything). Once the mixture looks like mayo, add in 1 tablespoon of lemon juice (or the juice of half of a lemon) either on super low speed or by hand. 

This meal was yummy and kept me full for a long time. I ended up adding some hot sauce to the mayo just because I like things spicy. If had the ingredients and hadn't run out of olive oil (read: hadn't messed up my first batch of mayo), I would have made ranch dressing and probably used that. But that's okay, this was still a really good meal.

SNACK:

DINNER:

Taco Salad with Ground Turkey (cooked in home made taco seasoning), Romaine Lettuce, Muir Glen Organics Mild Salsa, and Guacamole.

Yes, I made tacos again. Like I said, they're my fav. In fact, tonight I made 3 pounds of taco meat! Why? Because that's how much meat I had and it was all frozen together so once it thawed I had to use it all and I didn't have any other ways to use it (since I still need to go to the grocery). But don't worry, I am certain all that meat won't go to waste.

How I feel...

Currently, tired. But it is 11:45 PM and I am usually passed out by now. But I actually felt really great today. Still no headache. I still felt energized (in fact I cleaned my living room, reorganized my kitchen cabinets, ran the dishwasher twice, and worked all day then went to Youth Group) and very focused on work. I am loving the focus I am gaining. Normally after a bit I start getting distracted or sleepy, but I haven't felt that the past couple days and I am loving it. I feel so productive (not that I wasn't before but I think it has definitely improved). Plus, I feel like I have the energy to keep up with my little guy and not feel like I am going to conk out while I am trying to put him to bed. I know that my lack of headaches, cravings, etc are not the norm but I definitely 100% recommend everyone giving this program a shot. Even if you only last a few days, it is so worth it. At least for me it is. I love the way it makes me feel plus I love not having digestion issues, stomach aches, or heartburn. In just 3 DAYS. Guys, I do not know what you're dealing with, maybe it's joint pain or chronic headaches but did you know it could be food related? Isn't that insane?! But it is so true. I have heard story after story and I am a firm believer. I have done a 28 Day Clean Eating Challenge before which is similar to Whole30 but slightly different so I know the difference it can make in the long run. I just love Whole30 because (based on A LOT of research and only a few days of experience) it seems like something that will be easy to turn into a life style change....and that pumps me up! So excited for the next 27 days!

Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced. Sprinkle with salt and pepper.  -Bake face down on a baking sheet for 40 minutes -Once spaghetti squash is done cooking, let cool for a few minutes then shred the insides with a fork (it will easily peel away...

Paleo Pancakes TWO Ways!

I have always been a breakfast eater but never really a pancake eater. I LOVE eggs, potatoes and french toast. Mmm Mmm. :) However, when I was pregnant with my son I craved pancakes like it was my job. Luckily for me, my husband is a fantastic pancake maker. I mean, seriously, he does not cook, like evverrr. But that man, boy he can make amazing pancakes and omelets....breakfast is definitely his forte...at least in the kitchen. But, sadly once lil man was born, the pancake-making stopped but my craving and love for pancakes did not. So, here we are over two years later, still loving pancakes. And believe it not, lil man loooooooves breakfast. It's the one meal I can count on him eating and loving 100%  of the time. We usually have pancakes at least once a week. So, naturally, I had to move on from Aunt Jemima and Hungry Jack to something a little yummier and a lot healthier. Whole30 Day 2

Disclaimer: Due to our broken AC, the little man and I stayed with my Momma last night so my meals were semi impromptu and ended up lacking in veggies (but not in deliciousness!). Also, my meals will be a little more appealing once I have the opportunity to go to the store so don't give up on me if you're looking at these posts and thinking "Blah. Those meals are boring." 1) They're so yummy 2) They'll get better...I just need to make a trip to the grocery. Mmkay...onto the important stuff. Day 2 Breakfast: Two organic, cage free eggs over-easy with strawberries, blackberries, and blueberries. I mean, this is pretty straight forward and who wouldn't love it? I am a sucker for eggs over-easy. Lunch: Leftover taco meat topped with Muir Glen Organics Mild Salsa and guacamole. And more berries. Seriously.
