Whole30 Days 7-13

Sorry for the lack of posting this week. Sunday morning around 3:30 AM, I ended up in the ER (totally, 100% NOT related to Whole30). I was not released from the hospital until 1:30 PM. And I was felt pretty darn crummy the rest of the week so, posting about my Whole30 really was not high on my list of priorities. However, I am feeling way better and am excited to share with you about how I perservered during a very difficult week.

Day 7



 Day 7 I spent ten hours in the ER (again, I reiterate, NOT related to the Whole30). While I was there I was not permitted to eat or drink (nor did I want to). Upon my release I literally just wanted to go home and sleep; which is what I did. But eventually I had to take my pain medicine and of course it says "Take with Food" so, I rummaged through my kitchen looking for anything quick that I did not think would cause me to throw up (for like 4th or 5th time that day). I was hoping for a banana or some {unsweetened, organic} applesauce but we were out. I did find a Plum's Organic Mash Ups pouch that we bought for my toddler. It is made of pureed apples, purple carrots, and blueberries. So, I slurped that down, took my meds, and slept the rest of the day. That is literally all I ate on Day 7. I did drink a lot of water once I was home but mostly I just slept.

Day 8

Sorry no pictures today. Mostly because I once again ate barely anything. My stomach was still super upset from the meds they gave me in the hospital so I have to admit (I can hear the Hartwigs cringing [the Whole30 creators/authors]) that I drank a Sprite. And ya know what? I am not sorry about it. It definitely settled my stomach and made me feel like I could stomach some food. Throughout the day, I ate about half a Fuji Apple, some unsweetened organic applesauce, and a banana. Still not a lot of food and definitely not meals but hey, I did not feel good so whatevs. I, once again, slept most of the day.

Day 9


On Day 9, I was still in pain, but my appetite was starting to come back.

BREAKFAST:

I wanted two over easy eggs but ended up with two hard eggs. Oh, well. Eggs are eggs and protein is good for healing so it was worth it even it if it was not exactly what I wanted.

LUNCH:

Baked Sweet Potato with a sprinkle of cinnamon and a little coconut oil.

DINNER:

Trader Joe's Wild Caught Tuna in Water (drained) with Whole30 mayo and a squeeze of compliant yellow mustard.

SNACK:

Banana

I was little hungry before bed and I needed to take my meds so I needed to eat a little something. Bananas are high in sugar but they also have a good amount of carbs so I figured it would help curb my appetite, put enough in my belly that my meds wouldn't make me sick, and I would just ignore the fact that I ate a lot of sugar before bed. (I just do not care about some things when I do not feel good.)

Day 10


BREAKFAST:

Organic Fuji Apple drizzled with Sunflower Butter (unsweetened, unsalted) and sprinkled with unsweetened coconut shavings.

LUNCH:

Trader Joe's Chili Lime Chicken Burger topped with home made guacamole

I have to be honest. I was about ready to throw in the towel on this day. Especially at lunch time. Nothing sounded good. In fact everything made me want to gag. But what did sound good? Pizza. And of course, I look in the fridge and there are two white boxes from one of my favorite pizza places. I am convinced my husband enjoy torturing me. But alas, I did not cave. I did however, quite enjoy this little burger and would recommend it. I mean, it's not pizza. But it is a good burger.

DINNER:


This pulled pork is delicious and so easy. And I KNOOWW what you're thinking, peas are a legume. BUT this Whole30 document says peas are okay ---> Click Here for Proof. Plus, peas are my fav and they were easy to cook up since I still lacked energy and felt like crapola. 

Day 11


BREAKFAST:

Banana

I had a Doctors Appointment this morning so I was in a rush and had to eat on to go. So, a banana was the best option.

LUNCH:

Chipotle Salad Bowl with Chicken, Hot Salsa and Guacamole

So, talk about false advertising. I saw online that Chipotle found a new pork vendor and Carnitas were now being offered again. Wrong. But I already told my hubs we could have Chipotle for lunch so I couldn't renig since he had been a trooper through the ER trip, taking care of me, driving me and sitting through my appointment. Plus, I was just SO hungry. So, chicken it was. And boy was it yummy!

DINNER:

Leftover Pulled Pork with Whole30 Tangy BBQ Sauce from the new Whole30 book and a side of leftover peas.

Seriously. If you have not tried the BBQ sauce you should. I could eat that stuff with a spoon. It is that good!

Day 12

Sorry no pics! It was a busy day and I was surrounded by people so 1) I did not think about pictures 2) If I had thought about it, I would not have wanted to be that weirdo taking pics of their food. 

I went back to work this day but I had a meeting right off the bat and then another meeting. And the offices closed at noon for the Staff Hog Roast/Picnic. 

BREAKFAST:

Fuji Apple

I had to eat while I attempted to return voicemails and emails from my 4 days out of the office before my meetings began. Plus, I just LOVE Fujis.

LUNCH:

Pulled Pork, Fresh Fruit, Raw Veggies at my Staff Hog Roast/Picnic. 

I had my tot with me so I had my hands full otherwise I might have taken a picture of the Hog they were roasting and ripping apart to feed us. Pretty cool and gross at the same time. But, Mmm Mmm was it yummy! Even without the BBQ sauce! This was a first for me. I have attended many of the roasts over the years and I always drown the meat in BBQ sauce so to eat it plain was a new experience for me. I was sad at first (pathetic, right?) because I LOVE BBQ but it was actually very good with the sauce and I did not even miss it.

DINNER:

Hamburger topped with a tomato slice and wrapped in bib lettuce, a baked sweet potato with a sprinkle of cinnamon, fresh fruit, and a salad with Whole30 ranch.

This meal was at a cookout at my sister's. I was surprised by how yummy the Whole30 ranch is and so thankful to be able to eat a salad. I love salads but I have been struggling since most all dressings that I like are not compliant. I am just not a vinaigrette person. But this ranch was really good! Now if only there was a way to make Honey Mustard dressing compliant...Lol! Here's the Ranch Recipe: 


Day 13

Sorry no pics today either. We had a family girls day and went shopping at the outlet malls so I was pretty much on the go all day. Which is very testing when on a program like Whole30 but boy do I feel proud of myself for making it through the day without caving.

BREAKFAST:

Two hard boiled eggs sprinkled with salt and pepper and a side of fresh fruit

SNACK:

Lara Bar: Coconut Pineapple

It's a new flavor so I cannot remember the exact name but it was yummy!

LUNCH:

Max & Ermas: Erma burger, no bun, no cheese, no condiments with a side of broccoli

DINNER:

Watt Street Tavern (locally owned restaurant): Cafe Salmon (basted in olive oil, salt and pepper) with green beans and a baked potato (salt and pepper, no butter or sour cream)


How I Feel...

SO PROUD! I seriously have had a very rough week and there were so many times I just wanted to give up but I didn't and I feel so good about it! Plus, everything I ate was far more satisfying than what I was tempted to eat. I just kept reminding myself how caving would make me feel and that if I gave in I would have to start over and why would I want to do that when I am basically half way through. So, I feel really good. I am starting to notice a difference in how my clothes fit which makes me happy but most importantly I just feel good. Thankful to be halfway!

Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced. Paleo Pancakes TWO Ways!

I have always been a breakfast eater but never really a pancake eater. I LOVE eggs, potatoes and french toast. Mmm Mmm. :) However, when I was pregnant with my son I craved pancakes like it was my job. Luckily for me, my husband is a fantastic pancake maker. I mean, seriously, he does not cook, like evverrr. But that man, boy he can make amazing pancakes and omelets....breakfast is definitely his forte...at least in the kitchen. But, sadly once lil man was born, the pancake-making stopped but my craving and love for pancakes did not. So, here we are over two years later, still loving pancakes. And believe it not, lil man loooooooves breakfast. It's the one meal I can count on him eating and loving 100%  of the time. We usually have pancakes at least once a week. So, naturally, I had to move on from Aunt Jemima and Hungry Jack to something a little yummier and a lot healthier. Whole30 Day 2

Disclaimer: Due to our broken AC, the little man and I stayed with my Momma last night so my meals were semi impromptu and ended up lacking in veggies (but not in deliciousness!). Also, my meals will be a little more appealing once I have the opportunity to go to the store so don't give up on me if you're looking at these posts and thinking "Blah. Those meals are boring." 1) They're so yummy 2) They'll get better...I just need to make a trip to the grocery. Mmkay...onto the important stuff. Day 2 Breakfast: Two organic, cage free eggs over-easy with strawberries, blackberries, and blueberries. I mean, this is pretty straight forward and who wouldn't love it? I am a sucker for eggs over-easy. Lunch: Leftover taco meat topped with Muir Glen Organics Mild Salsa and guacamole. And more berries. Seriously. I wish I made more of this because it is seriously THAT good! Snack: Apple Pie Lara Bar If you haven't tried Lara Bar...
