Whole30 Results!

Okay guys, the results are in! Well, technically they have been in, I just have not taken the time to post them. I must say that I am pretty pleased with the outcome and I am kind of ready to do another Whole30 ( key words: kind of) . But I think I will hold off another week or two because I am heading to Arizona next week for a wedding and then we are heading to the in-laws' (North Carolina!) over the 4th of July. So, for now I am going to try my best to continue eating Whole30-ish but won't officially start another Whole30 until maybe mid-July. I must say that the past week has not been the best. I did not stick to my plan of continuing the Whole30/Paleo lifestyle like I had hoped. I have had some pizza, sweets, and BBQ chicken but I am still trying my best to stay on the healthy track because it simply feels better. Whole30 Days 29-30

YAAAAAAAAAAAAY!!! I did it! You guys have NO idea how exciting this is! I am one of those awful people that tends to start things without finishing them. I am seriously so proud of myself and feel SO empowered and confident right now! Yay Yay Yay! Okay, here we go... Day 29 BREAKFAST: Sauteed Zucchini and Sweet Potato topped with two Over Easy Eggs I got this idea from an episode of Pioneer Woman in which Ree was home alone so she was making lighter dishes. She made this breakfast that she called " Carb Buster Breakfast " in which she sauteed zucchini and yellow squash with onions, topped it with grilled tomatoes and two poached eggs. I did not have yellow squash and since I am not watching carbs (as she was when she prepared her dish), I decided to use a sweet potato since those Zucchini & Sweet Potato Latkes I made a week or so were SO yummy. Whole30 Days 24-28

This week was VBS so it was completely CRAZY! I literally pulled into my garage each night, grabbed my kiddo out of his carseat and ran across the parking lot to the church. So, meals weren't overly glamorous (but lets be honest, when are they?) but they did the job! Day 24 BREAKFAST: Zucchini & Sweet Potato Latkes topped with an over easy egg This latkes were DELICIOUS and so easy to throw together. They just take some patience while they cook. I loved them! SNACK: Blueberries LUNCH: Aidell's Chicken & Apple Sausage with Sauteed Zucchini and Potatoes My husband begged me to make more potatoes and since they were going bad anyway, I obliged and they were yummy. BONUS: I even talked him into eating some sauteed zucchini! Whole30 Days 14-23

When I started Whole30, it was my intent to write posts every day. Well, as you can tell, that just did not happen. I apologize. Life is just crazy and I simply have not had the time. So here is an update from the past week. Day 14 BREAKFAST: Sliced Banana with a scoop of Barney's Almond Butter Sunday mornings are super duper busy so quick breakfasts are all I have time for as I am usually running out the door at the last possible minute. My husband is a pastor so he heads to the church early so I have to get myself and our son ready. I should probably just wake up earlier so I can have a better breakfast on Sundays, but I prefer the sleep. LUNCH: Paleo Buffalo Chicken Wings with Roasted Broccoli and Whole30 Ranch Oh muh gooooosh guys. These wings were SO good. I totally ate like 6 of them.
