Ingredients: 1 cup (approx 1 small or 3/4 medium) shredded zucchini 4 Eggs 3 T honey or pure maple syrup 1 mashed banana 1 T (melted) coconut oil 1/2 cup Coconut Flour 3/4 t Baking Soda 1/2 t Salt 1 T Cinnamon 1/2 t All Spice 1 t Apple Cider Vinegar 1/2 cup Walnuts (optional) Directions: 1) Preheat oven to 350 degrees and grease a loaf pan with coconut oil (I like Trader's Joe's Coconut Oil Spray ) 2) Shred zucchini. Wrap in a towel or several paper towels and squeeze out excess water. Set aside. 3) In a large bowl, mix together the eggs, banana, coconut oil and honey or syrup (I used both because I did not have enough honey). 4) Add coconut flour (I like Coconut Secret brand), baking soda, salt, cinnamon, all spice and zucchini.
