Paleo Zucchini Bread

Ingredients: 1 cup (approx 1 small or 3/4 medium) shredded zucchini 4 Eggs 3 T honey or pure maple syrup 1 mashed banana 1 T (melted) coconut oil 1/2 cup Coconut Flour 3/4 t Baking Soda 1/2 t Salt 1 T Cinnamon 1/2 t All Spice 1 t Apple Cider Vinegar 1/2 cup Walnuts (optional) Directions: 1) Preheat oven to 350 degrees and grease a loaf pan with coconut oil (I like Trader's Joe's Coconut Oil Spray ) 2) Shred zucchini. Wrap in a towel or several paper towels and squeeze out excess water. Set aside. 3) In a large bowl, mix together the eggs, banana, coconut oil and honey or syrup (I used both because I did not have enough honey). 4) Add coconut flour (I like Coconut Secret brand), baking soda, salt, cinnamon, all spice and zucchini. Mix well. 5) Add Apple Cider Vinegar and Walnuts. Mix until smooth. 6) Pour into loaf pan and bake at 350 for 40-50 minutes (until a toothpick inserted into the center comes out clean) 7) Enjoy! Why MamaKenBFit?!?!

I am sure many of you have wondered this...Why MamaKenBFit? What's the point? The plan? The purpose? Well, let me explain why I started MamaKenBFit and what my hopes and goals are for it.  1) I have always been intrigued by all things nutrition and fitness. It is so fascinating to me how food and exercise affects not just our physical health and bodies but also our mental health, our mood, our personality, our brain and much more. Seriously, I have a box of magazine articles consisting of recipes, workout routines, health tips, etc from MIDDLE SCHOOL!  I exaggerate not when I say I've ALWAYS been intrigued by health, fitness and nutrition. Meatless Monday: Spaghetti Squash Chow Mein

This recipe is seriously one of my absolute favorites! It is super easy and super yummy! Plus, it's packed full of veggies! Ingredients: - 1 Large Spaghetti Squash  - 1/4 cup Coconut Aminos - 3 1/2 cloves garlic, minced  - 1 T Coconut Sugar - 1 t Ginger, minced  -1/4 t Pepper -3-4 T Olive Oil -1/2 Onion, diced - 1-1 1/2 cups Coleslaw Mix (cabbage & shredded carrots) - 1-1 1/2 cups Shredded Purple Cabbage -1/2 Yellow Squash (optional)  Directions: -Preheat oven to 375 -Carefully split spaghetti squash in half length-wise (you may have to pop it in the microwave for 1 minute to soften it in order to cut it easier) -Scoop out seeds -Brush spaghetti squash with 1-2 T olive oil mixed with 1/2 clove garlic, minced.
